If you've been watching Stonebridge grow over the years — from the day Wegmans opened and felt like a revelation, to Alamo Drafthouse, to Firepan and Dok Khao Thai and Brew Republic filling in the corners — you already know that this stretch of Potomac Town Place has quietly become one of the best reasons to stay in Woodbridge on a Friday night. This Sunday, it gets even better.

Cooper's Hawk Winery & Restaurants opens May 18 at 14901 Potomac Town Place, and we went down last week to see it taking shape. Construction cones were still lining the fresh-laid pavers, workers moving in and out. But even from the outside, the scale of it was clear. The signage is striking, the building substantial, and the flower beds were already planted and blooming. Someone is paying attention to the details.

If you're not familiar with Cooper's Hawk, it's more than a wine bar and more than a restaurant. The concept brings together a full-service dining room, a Napa-style tasting room, and a retail wine market all under one roof. The menu runs contemporary American with international influences — think bold flavors, carefully sourced ingredients, and a kitchen that clearly takes the food as seriously as the wine.

Every dish comes paired with a recommended Cooper's Hawk wine, with a bin number on the menu guiding you to the right bottle — so whether you're a seasoned sipper or still finding your palate, the guesswork is done for you. For those who want to go deeper, Cooper's Hawk runs one of the largest wine clubs in the country: a monthly curated bottle, member perks, and a devoted following that has built up across their locations nationwide.

For Stonebridge, this feels like a natural next chapter. The center already has your weeknight Korean BBQ at Firepan, your wood-fired steakhouse at Firebirds, your craft beer at Brew Republic. What it hasn't had is a proper wine destination — somewhere to linger over a glass, celebrate something, or simply decompress after a long week without driving to D.C. or Old Town. Cooper's Hawk fills that gap.

Happy Hour runs Monday through Friday from 3 to 5:30pm, with small bites starting at $10. Weekend brunch kicks off at 10am both Saturday and Sunday. Dining reservations are strongly recommended — especially for opening weekend. Wine tastings are walk-in only.
